We love using honey in our baking with fresh milled flour. In fact, I literally buy it by the case now (and share some with my neighbors). We all need to be careful of our sweets intake, but there are so many reasons that we choose honey over processed sugars. When switching our honey for sugar in a recipe, I usually switch one for one, so 1/2 a cup of sugar is replaced with 1/2 a cup of honey, or a little less since it is so sweet, so possibly only ⅓ cup.
