My Favorite Things
(Baking Edition)
"Mise en place" is a French culinary phrase that means "everything in place" and I try to follow this plan in my baking. Everything has a place and when I need a tool, I know exactly where it is - believe it or not, all of these things have a spot in my kitchen, drawer, cupboard, and pantry.

My Favorite Recipe Books For Fresh Milled Baking
Want to see what is in my fresh-milled library? I’m obsessed with these gorgeous books. I’ve read most of them from cover to cover. (I’ve read a ton of others too, but these are the best!)
01
Peter Reinhart's Whole Grain Breads
You will learn so much by reading this book. This baker is so skilled and when I grow up, I want to be like him. These methods are about the flavors and art of baking.

02

by Katzinger
03
The Essential Home-Ground Flour Book
by Sue Becker
04
Whole Grain Baking
by King Arthur Flour
05
Bitman Bread
by Mark Batman and Kerri Conan
This book makes the huge job of baking bread feel so simple. Great find.

Challenger Pan
The Challenger Pan is game changing! I use this pan exclusively for all of my sourdough boules and bartards. This cast iron pan retains heat beautifully for a perfectly baked loaf, but the cloche shaped and numerous handles make the pan easy to operate without risk of burns (like when lowering bread down into a dutch oven.)
