Sausage Kolaches (Shipley's Copycat)
made with Fresh Milled Flour

These Kolaches were written as a copycat recipe of Shipley's Kolaches. They are a great protein packed breakfast!
Serving size: 16 kolaches (or 1 loaf of sandwich bread, and 8 kolaches)
Bake: 30 minutes

Ingredients for dough:
1.5 cups water
1 egg
1/3 cup avocado oil
1/3 cup honey
630 grams (4.5 cups) whole wheat flour (I used fresh-milled hard white wheat)
2 tsp salt
1 tsp vital wheat gluten
4 tsp yeast

Ingredients for Kolaches:
16 Earl Campbell's Sausages (or 8 cut in half, long ways)
8 American cheese slices (I know, I am sorry, LOL)

Directions to make the dough:

In order to make the process quick, mix the flour and liquids to start the autolyse.

Dump all of the remaining ingredients on top and let that sit without mixing for 20-30 minutes. That leaves a few minutes for clean up and buttering the bread pans (8.5" to 4.5").

After the 20-30 minutes autolyse, knead well, until the dough is at a windowpane.

Directions to make the kolaches:

Rest for about an hour or until dough is soft.

Divide dough into 16 pieces.

Roll a piece of dough into a rectangle, lay half of a cheese slice and a sausage on the dough, and wrap the dough to close.

Allow the dough to rise about 30 minutes in a warm place.

Bake at 350° for 20 minutes or until tops begin to brown.

Serve hot.
